Gluten Free No Bake Cookies

Every year my husband had these no bake cookies made for him by his mother. After we got married, I was excited to create my own! Since they are gluten free, I am able to enjoy them with him.


It took many different attempts to find out what worked and what did not. I have sadly thrown away many inedible pans of no-bake cookies to get to the point where we are today!



No ingredients were harmed during the process.

This is one of our favorite holiday treats for us, as well as the kids. No oven, quick creation time and lasts for up to a week in the fridge and as long as 4 months if frozen!



 


Gluten Free No Bake Chocolate Oat Cookies


Step 1: Gather Your Ingredients


Feel free to add additional items based on personal preference:

  • 1 3/4 cup Sugar - We use granulated but brown sugar works too!

  • 1/2 cup Cocoa Powder - Unsweetened seems to work best

  • 1/2 cup Milk - Heavy cream works too!

  • 1/2 cup Salted Butter - Unsalted is okay too just don't forget to add 1/2 tsp of salt 🧡

  • 3 cups Quaker (Gluten Free) Oats - Any brand works.

  • 1/2 cup Peanut butter (Creamy or Crunchy)






Step 2: Create a Yummy Masterpiece


  1. Put your sugar, cocoa powder, milk and butter into a large cooking pot over medium heat and bring to boil. - Boil for one minute.

  2. Remove from heat. Immediately add oats and peanut butter to pot.

  3. Stir together until fully combined.

  4. Scoop tablespoons of concoction out of the pot and place onto baking sheet.

  5. Cool for 30 minutes and enjoy!






Don't forget to check all ingredients to ensure they are gluten free. Many companies change the ingredients to their products without a large explanation to their consumers.
