Grandma Cassie's Tasty Hot Potato Salad
Updated: Jan 10
It's like Potato Salad and Mashed Potatoes combined!
Throughout my adolescence, I was presented with a side dish at every holiday get together, family outing and picnic that no one seemed to know about but me. My grandmother Cassie (rest her soul) would make this amazing concoction for myself and my brothers consistently. I adored it so much; I now make it for each holiday and get together for my children. Like me, they can't get enough of this family favorite!

Get ready for a piece that is sure to be the talk of your next holiday party!
First, Let's Name the Ingredients
8 Idaho Potatoes (Peeled and cubed)
5 eggs
Relish or chopped dill pickles
1/2 lb. Bacon (Or bacon bits)
3 tbs. Mustard
4 tbs. Miricle whip (or mayo)
Salt & Pepper to taste
Step 1: Let’s Get Started
Place peeled and cubed potatoes into a large pot of boiling water and boil covered for 15 minutes.
While potatoes are boiling, place eggs into medium pot of boiling water and boil for 15 minutes as well.
Step 2:
If you have chosen bacon bits for your recipe, skip to step 3.
Fry bacon until crisp and lay on a paper towel covered plate. Soak access grease from bacon and then chop into desired size. I like them smaller; my husband prefers larger chunks.
Step 3:
Drain potatoes and place them into a large bowl. Using a fork, smash roughly half of the cubes.
Step 4:
Drain and peel eggs. Cut eggs into 1/2-inch cubes and add to potatoes.
Step 5:
Add bacon, mustard and Miricle Whip to bowl and mix with large mixing spook
Serve immediately and enjoy! Serves 6.
Hope you enjoy your dish!
This recipe is always a crowd pleaser and I've been asked for the recipe more times than I can count. It's amazing what small changes, to an already amazing set of ingredients, can do!
Enjoy your next gathering!
