Leftover Easter Ham Breakfast



Easter is such a wonderful time of year. Time for family, friends and sugar!

After the festivities end and everyone returns home, the host is normally left with a large number of leftovers that they need to find meals to make with.

One of my favorite meals that my husband has created with these leftovers is eggs, vanilla extract, ham and cheese. Simple, yes — but amazing, nonetheless. Gather your ingredients:

  1. 6 Eggs

  2. 3 drops vanilla extract

  3. 1/8th cup milk

  4. 3 slices of ham cut into 1/2 in squares

  5. 4 slices of American cheese

salt and pepper to taste.





Scrambling the eggs, milk, and vanilla extract in a bowl, adding the mixture to a medium sized skillet and making the magic! Once the eggs are halfway cooked through, add your ham to the pan to get it heated and to cook the flavor into the ham.

Nice fluffy and warm on a plate! Yummm. Now, add your cheese and season with salt and pepper.

Feeds two and makes for such a simple, easy and tasty morning meal.


While writing this I realized how terrible I am at this whole cooking thing. Which is funny since it is biased as womans work. My husband can create some amazing pieces of art with food, and I create destructive science fair projects.

However, creating these recipe (or kind-of recipe) articles are helping me to create dishes for my family on my own for the first time in my adult life.
