Gluten Free Crockpot Lemon Chicken
We have a family of six in our household, and sometimes it can be hard to find a dinner that everyone likes. We're all busy and don't have massive amounts of time to be slaving away in the kitchen. Not to mention, I am gluten intolerant, which limits ingredient options.

I needed to find a dinner that had a quick preparation and that everyone would love.
So, let me provide you with a mouthwatering dinner for the busy parents, the single parents or the parents who normally tell people they can't cook.
Gluten Free Crockpot Lemon Chicken
Ingredients:
3 lbs. boneless chicken breast
32 ounces unsalted chicken broth
1/4 cup oregano
3 tbs lemon juice
1 tbs lemon pepper seasoning
dash of Salt and pepper
Optional: One full diced onion.
Directions:
In a large bowl, add chicken, oregano, lemon pepper seasoning, salt and pepper.
Mix together and place in the fridge overnight or at least four hours. (This step is optional but fuses the ingredients into the chicken and makes for a better flavor profile.)
Place chicken and spice mixture into crockpot.
Add chicken broth and lemon juice.
Cook on low for 8 hours or high for 4 hours.
Strain chicken and serve any way you wish!
